Nutmeg really makes alfredo sauce

A little freshly grated nutmeg really makes the difference in alfredo sauce. Takes it from pasty and greasy to rich and smooth. Amazing how that works. Seasonings really are important – I experienced this with my SPAM chili this week. First taste was bland – too bland. The tomato flavor, SPAMmy flavor and beef flavor were all independent on one another and not quite right. A few teaspoons of salt, another tablespoon each of cumin and thyme and a couple tablespoons more of chili powder made the difference between chili I would have choked down and leftovers I was looking forward to eating 2 days later.
